Menu Monday

Last week's schedule and menu:

Monday: Hamburgers and hot dogs at the church softball game - Yes, this happened
Tuesday: Pork Chops with Garlic Parmesan Crust and Twice Baked Potato Casserole - This did not happen.  I think my husband came home way late from work so I made this Wednesday instead.
Wednesday: Three Cheese Chicken Alfredo Bake - Pork Chops with Garlic Parmesan Crust and Twice Baked Potato Casserole and it was awesome!  I put a little too much garlic in the crust but it actually came out great.  I also put a little too much sour cream in the potatoes but they weren't bad either.  They really tasted like baked potatoes!
Thursday: Frozen pizzas (softball game) - I think we actually ate leftover pork and potatoes
Friday: Out - I honestly can't remember what we ate but I know we didn't go anywhere.  Wendy's maybe?
Saturday: Red Potatoes and Ham Casserole - This was pretty good.  I'm not a fan of Ranch anything and this was a little strong for me with the Ranch taste but not bad.  I will make it again and just dial down the Ranch.
Sunday: Homemade Mac and Cheese - Did not make this Sunday.  I can't remember what we ate but it wasn't this.

I think we got one or two walks in, which just isn't enough.  I was afraid of just crossing stuff off and moving it and that's exactly what I did.  This is a bit of a crazy time for us so hopefully next week I can stick to the schedule a bit better.

I forgot to change Saturday's menu on my schedule.  My husband and I are going out to dinner Friday for my birthday and then my parents are taking us out Saturday for my birthday.  Maybe I'll make the Alfredo for lunch?

Ashlyn's Dedication is this weekend so I have a VERY busy week ahead, which is why we are eating so many leftovers.  At least they won't go to waste!  Here's hoping for a slower week next week so I can try some new recipes.
